The Acid Alkaline Diet

The use of the acid / alkaline diet has been primarily based on people who follow food combination diets. The idea is that the body produces certain reactions to foods based on their acidity or alkaline properties. Proponents of the Acid / Alkaline diet suggest that our ancestors ate a primarily alkaline diet and that our bodies are suited for it; however, the westernized culture promotes an acidic diet which can cause illness and disease.
Almost all foods when digested, release either an acid or alkaline base into the blood which affects the overall pH balance of the blood. Ideally, the pH level of our blood should be around 7.35 - 7.45. When you eat foods that primarily give off an acidic base, such as grains, fish, meat, poultry, cheese, milk and salt products, it disrupts the balance of the body. This is why industrialized nations suffer from so many problems caused by acidosis of the body.
Alkaline producing foods, including a wide variety of vegetables are under-eaten in our society, but that may come as no surprise to most people. The dramatic change in the predominant type of food we eat has had a huge impact on the amount of autoimmune diseases, heart disease, and gives the higher risk of most cancers that westerners experience. This will give you an indicative range that you can base your meal planning around. The correct range for saliva is between 6.4 and 6.8 as it is slightly more acidic than blood.
If you test under the specified range, your body is in an acidic state and you will need to consume more alkaline producing foods to balance it out. Get a chart from your doctor, or try searching the internet to find a chart to help you plan your meals around. Remember though that you don't need to eliminate acid producing food from your diet - just reduce it so it forms roughly 40% of it.
